Vegetarian Chop Suey

Yields: 4 Servings

This Vegetarian Chop Suey made with honey and soy sauce is packed with flavor and very easy to make.

Directions:

  1. Cook onion, celery and mushrooms in oil in large kettle or wok until tender but not browned.
  2. Add bean sprouts and broth. Cook and toss until bean sprouts are tender-crisp. Do not allow vegetables to become soft.
  3. Add green pepper, honey, soy sauce and salt; heat thoroughly.
  4. Serve with brown rice.

Ingredients:

1 large onion, chopped

1 cup sliced celery

½ lb. mushrooms, sliced

2 Tablespoons oil

6 cups bean sprouts, washed and drained

¼ cup beef, chicken or vegetable broth

1 green pepper, chopped

1 Tablespoon honey

2 Tablespoon soy sauce

Salt to taste
